Lighten up! Blue Cheese Biscuits

Are you like me? Working on 'difficult' subjects?


So.... Take care of yourself and your friends.


Here is something more relaxing….

 

Try my Blue Cheese biscuits. They take 5 minutes to make. You then freeze them until you and your friends are hungry. Bake for 10 minutes. Scoff them all down in one sitting. They also keep well for 2-3 days in an airtight container – but, why wait?

 

Take 150 gr of butter out of the fridge – needs to be at room temperature

Take 150 gr of blue cheese out of the fridge – needs to be at room temperature

 

Depending on how warm your home is, this will take a few hours so, while waiting, write a poem or read a chapter in a book.

 

Then: Mash the butter and the blue cheese together.

 

Add:

2 tbs cream

1 egg yolk

130 gm flour

Pinch of salt

¼ tsp of chilli flakes (my favourite!) or dried herbs or poppy seeds

 

Mash until no lumps. It will be very sticky.

 

Lay out a piece of cling film.

 

Put the dough on it and form into a long roll. Twist the ends of the cling film so the mixture is nice and tight.

 

Freeze. Write. Sleep.

 

When hungry:

 

Heat up the oven to 200 C (400F)

 

Sip a mug of tea while waiting.

 

Line a pan with baking paper or (if you are posh) use silicone baking mat.

 

Take the dough out of the freeze (do not defrost!) and slice into rounds (each should be ½

cm or ¼ in thick).

 

Place on baking mat and then pop in your oven for 10 minutes until toasty-brown.

 

Cool on a wire rack for a few minutes.

 

Eat. Smile. Talk.
